My Guilt Free and Fool Proof Walnut and Raisin Banana Bread [vg]

So it's been nearly 7 months since my last blog post..! I don't know where the time has gone but I am gracing the internet with my presence again to post the much requested recipes you will have seen me baking each week during the UK lockdown.

This is the first one - my easy and pretty much guilt free walnut and raisin banana bread. I have seen so many 'influencers' posting their sad, sunken banana breads that it's time you had a more reliable recipe to hand..! I wasn't planning on even posting these recipes so I apologise in advance for my IG story screen grabs of the inserted photos! Next time I bake them I will be sure to take some snaps :)


Perfect every time!


Ingredients:

  • 4 ripe bananas, mashed
  • 70ml coconut oil, melted
  • 200g plain flour
  • 1/4 to 1/3 cup granulated sugar (must be granulated for texture)
  • 1tsp ground cinnamon 
  • 1tsp bicarbonate soda
  • pinch of salt
  • handful of raisins and chopped walnuts (or fresh blueberries for a blueberry loaf!)

N.B. I've found that more sugar is needed for darker flours such as buckwheat and rye



Method:
  1. Mix!
  2. Bake at 175 degrees for 35 minutes (I use a fan oven so cooking times will vary slightly if your oven is different) 
  3. Remove from oven once cooked - bread should be browned on top and spring back when gently pressed in the middle. Leave to cool on a wire rack so you don't get a soggy bottom!
  4. I love mine warmed up and topped with salted PB or AB :)
