Easy Oatmeal Raisin Cookies [vg]

Presenting to you - UK lockdown staple number two! My oatmeal raisin cookies. 

These cookies are so easy that I have had people with small kids tell me that they have used my recipe with them and it went down a treat! The cookies are also guilt free IMO and although they feel like a little indulgence, they're really not when you look at the basic ingredients!


I seem to be unable to eat food that isn't topped with PB or AB atm! Oops.


Ingredients:
(Makes about 9 cookies)
  • 2 ripe bananas, mashed
  • 2 cups jumbo oats
  • 1tsp ground cinnamon
  • 2 heaped tbsp salted PB or AB
  • pinch of salt
  • handful of raisins




Method:
  1. Mix!
  2. Press and shape into cookies with your hand - TOP TIP: wet your hands before doing this so that less of the mixture sticks to your hands and more of it helps to form the nice and even cookie shape
  3. Bake at 180 degrees for 15 minutes or until browned on top
  4. Remove from oven once cooked and allow to cool for 5 min on the tray before transferring to a rack - this first step ensures your cookies don't break up and the latter step ensures you don't get a soggy bottom..!
  5. Enjoy covered in PB or AB!
  6. I store these in an airtight container at room temperature for about 3 days (they don't last longer than this in our household..!)
